Eighth Box

Delivery of Box Eight was delayed because of very cold weather. But stuff is taking off again! Spinach, salad greens, parsley, fennel, lentils, squash, garlic ... and cute little leeks. Ah, Spring. I can almost taste the asparagus to come ... and meanwhile we'll enjoy these fresh, green wonders.

Those are tempting me to join a CSA, but I get so much pleasure from going to farmers' markets. I think the CSA might stress me out not wanting to waste any food!

I, too, am a devoted fan of the delights of farmers' markets, but we don't have them here in winter, which is why I sign up for the Winter CSA only. Not much of my Winter CSA produce gets wasted ... I sometimes share it with friends and friends of friends, if I can't use it.

Short and not so sweet

Grains, sugars and flours are high in dense carbohydrates, and when consumed, raise insulin levels in the body. Insulin instructs the carbohydrate calories to be stored as body fat, often on the belly. High circulating blood insulin (from eating frequently and/or ingesting high-carb foods) creates inflammation (a blood marker as high C-reactive protein), an indicator of several disease conditions.

Grains and legumes also contain lectins, mild toxins that over time irritate and damage the gut lining, causing food particles to pass through it into the bloodstream, setting off a host of autoimmune conditions. Grains and legumes are fed to cows to fatten them; cows were designed to eat, and prefer, grass.

Healthy fats are from fish, grassfed meats, ghee, coconut oil, avocadoes, eggs, and some nuts. Healthy fats do not cause heart disease, but help prevent it through reducing inflammation in the body. Extracted seed oils (canola, soy, cottonseed) raise Omega 6 levels and also promote inflammation. Inflammation promotes heart disease, diabetes, cancer, and a host of other diseases.

Packaged, processed foods designed for taste, addictive qualities, and thus profit, CAN be eliminated from the diet and replaced with fresh, whole foods.
